well this is a question asked by many people in India or outside. Indian food are actually healthy when it is made with time, involvement of proper nutrients or spices. Indian foods are rich in fiber and provide best carbohydrate percentage across the world. 1. ingredients- Indian foods often includes a variety of vegetables, chickpeas,whole grains such as Brown rice and whole wheat , lentils and spices, etc. These are always very nutritious and provide vitamins, minerals, etc.
 
2. Spices - Many Indian dishes are flavored with spices like turmeric, cumin, coriander, and ginger, which not only add flavor but also have potential health benefits due to their antioxidant and anti-inflammatory properties.
 
3. Cooking method - in tradition way of cooking Indian food we do steaming, grilling and baking which is healthier than frying but there are some food which are extremely fried with oil and use Ghee that increase calorie and fat content. People should avoid extreme frying with oil and ghee.
 
4. Diversity - Indian foods mostly varies across regions so healthy quantity may differ in places. Like - South Indian dishes use more rice and seafood with bitter leaves like Curry leaf while In the North people use to eat more bread (Roti and Nun) and Dairy based dishes like Ghee, Butter,etc.

5. Balance -A well balanced Indian food item includes a variety of dishes, such as Dal (lentil soup), Sabzi (vegetable dish), Roti (whole wheat bread), and yogurt (often in the form of Raita). This variety helps in achieving a balanced intake of nutrients.

6. Cultural Practices - Indian meals often include sharing dishes, which can encourage moderation and variety.

Indian food can be healthy if you use more fiber rich food, whole grains, etc instead of over fried food that use oil and Ghee. Balancing the diet would be a great choice for getting benefits from Indian dishes.

Cooking method - They use excess oil for frying the dish and sometimes ends up over fried.

Unqualified ingredients - Some vendors may use inexpensive or low-quality ingredients to cut costs, which can compromise the nutritional value of the food.
